Potato Chips with ground lemons that have been pickled in brine. Pickled lemons are widely used in African cuisine and more specifically in Moroccan cuisine, where they are known as Hamad Mraquade. The lemons undergo a fermentation process with the help of a good amount of salt and the juice of the lemons themselves. After a long wait (minimum 4 weeks) we can use them for recipes.
