Our 100% pure bred Iberico pigs are raised for over 18 months at the family-owned Trails End Ranch in the Texas hill country. They forage on native grasses, acorns, prickly pear cacti and their favorite, mesquite beans. The result is an extraordinarily high-quality pork, prized for its unique fat and depth of flavor.
While similar to prosciutto and Spanish Iberico de Bellota, this artisan-cured American Jamón is uniquely Texan — a two-step of earthy and complex flavors.
Our Jamon is the star of every exquisite charcuterie board, gourmet sandwich, or fancy tailgate it graces. It’s also incredible straight out of the package.
